There is in Leeds a brewery fascinated by the tradition of brewing beer by monks. Their trademark is a hooded figure of monk. Here is Eternal – beer from Northern Monk Brew.
Northern Monk is a young brewery from Leeds, which founders with great respect refer to the past, to monastic brewing. They take their activity with solemnity, putting great importance to the entire envelope associated with brewed their beer. At every step, in every aspect we find clues leading towards the past.
Northern Monk Brew Co. was established in 2013 and since August 2014 is located in Marshall’s Mill – Grade II listed former flax spinning mill in Holbeck, Leeds.
During the year, their beer was already available throughout the UK and by exports goes to many countries around the world.
They have own line of canning beer, plans to open bottling line.
Weekly production of beer is 20,000 pints.
At every occasion, they remind about heritage, about tradition of thousand years of brewing in monasteries such as Fountains Abbey and Kirkstall Abbey in Yorkshire. These are the Cistercian abbeys, which dates back to the twelfth century and which ruins are today testament to their former glory and order with respect refer to history.
The figure of a hooded monk is the central element of the brewery logo, appearing on each package. It also appears in advertisements and is, so to speak, the mascot of the brewery – as so-called Libations Brother.
In addition, on-site is The Refectory, which is a pub combined with a restaurant, where in the offer is a large selection of beers and dishes for any time of day.
Chapter Hall is the place for all kinds of events, exhibitions, weddings, etc.

It is known that in the brewing process were used Simcoe and Centennial hops, the other parameters I present below.
Name: ETERNAL (Session IPA, 4,1% ABV, 45 IBU)
|Amber colour with a tinge of orange.
The beer is slightly cloudy, opalescent.
Foam is high, white, fine bubbles, quickly punctures and fray.
Directly after pouring beer firmly effervesce, is visible large amount of bubbles, after a moment calms down.
|Along with the hiss of opening can is released very intense aroma.
It feels tropical fruits (mango, passion fruit, lychee), as well as pine and resin.
You do not even need to approach the nose to the surface of the beer – aromas are noticeable from a distance.
|In turn in flavour at the forefront are citruses: grapefruit, notes of oranges or tangerines, a little further are present tropical fruits.
This fruity flavour brings a slight sweetness.
Immediately, however, we get a strong counterattack of pine and resin, which in turn brings dry, intense bitterness.
It is resinous and citrusy in character and unexpectedly violent as for 45 IBU.
Next we get bitter finish: resinous, dry, quite lasting.
Carbonation is moderate (only at the beginning rather turbulent). Medium-bodied.
Eternal from Northern Monk Brew is extremely flavourful session IPA.
Hops well done their job and released the enormity of aromas: fruity, pine, resinous.
The flavour is a combination of the sweetness of fruits – citruses and tropical, with a crisp bitterness of pine and resinous in character.
Finish is clearly bitterish, dry, pine.
In this beer does not have to search for aromas, does not need to traced to the nuances of flavours – everything is intense and from the very beginning holds tight until the long finish after the last sip.
And as usual in such cases, I regret that this can is so small.
